The one pot mushroom rice recipe is a tasty and hearty meal that can be made in one-pot in under 40 minutes. The perfect addition to your Veganuary menu, this is perfect for kicking off a healthy new year diet.

Kohinoor Bhuna sauce- 1packet
Kohinoor Basmati rice – 250 grams
Cooking oil – 2tbsps
Cooked Chickpeas – 1tin
Diced mixed mushrooms – 500 grams
Chopped onion – 1
Chopped coriander leaves – 2tbsp
Cumin seeds -1/4tsp
Salt – 5 grams
Take a heavy pan with lid, heat oil in the pan, add the cumin seeds, when they crackle add the chopped onion, sauté, add diced mushrooms and stir fry till they have a light brown colour.
Add the chickpeas and the Kohinoor Bhuna sauce, bring to a boil.
Mix the rice in with the sauce, add the 400ml of boiling water and salt.
Allow to cook on medium heat till all the water is absorbed and holes form on the surface of the rice, cover with kitchen paper towels, cover with lid and reduce the heat to very slow, allow to steam for 10 minutes, open and fork the rice to make it fluffy.
Serve one por mushroom rice hot with a sprinkle of chopped coriander leaves.
