Ingredients

260g plain flour
2 tbsp caster sugar
2 tsp baking powder
pinch of salt
1 tsp ground cardamom
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp nutmeg
1 tsp ground ginger
1 tsp vanilla extract
3 eggs
375 ml whole milk
30g butter

Method

  • Sieve together the flour, baking powder, salt, and spices in a large bowl
  • Make a well in the centre and whisk the eggs in one at a time
  • Slowly add the vanilla and milk to the mixture whilst whisking
  • Heat a large frying pan
  • When hot, add the butter and melt
  • Add the melted butter to the mixture and mix well
  • When the pan is hot enough, use a ladle and spoon your mixture in
  • Cooking for 2-3 minutes before flipping
  • When the pancake is golden on both sides, take out of the pan and keep warm
  • Cook the rest of the pancakes
  • Serve with syrup and fresh fruit
