Ingredients

100g butter
100g runny honey
2 tablespoons crunchy peanut butter
2 bananas, sliced
100g walnut halves
2 teaspoons ground cinnamon
175g rolled oats
25g dried cranberries, plus a few more to decorate
25g pecans, plus a few more to decorate
15g sunflower seeds, plus a few more to decorate

Method

  • Pre-heat the oven to 180 degreesËšC (160 fan)
  • Line a small rectangle baking tray (around 15 x20 cm) with some baking paper
  • Heat the butter, honey and peanut butter in a large pan until the butter has melted
  • Take the pan off the heat and stir in the oats, walnuts, cinnamon, seeds, pecans, dried cranberries, and banana slices
  • Tip the mixture into the prepared tin, pressing down as you go so that it is evenly distributed
  • Sprinkle over the remaining pecans, cranberries, and sunflower seeds
  • Bake the breakfast bars for around 20 minutes, or until the edges have started to firm up
  • Leave the mixture to cool in the tin before slicing
  • These bars will keep for up to a week, stored in an airtight container
