Ingredients

For the Paneer:
2l full-fat milk
3 tbsp lemon
For the marinade:
1 tsp lemon juice
1 tsp chilli powder

1 tsp ground cumin
1 tsp ginger and garlic paste
1/2 tsp turmeric powder
1 tsp oil 
100g thick curd
1 tbsp cornfour
1 tsp garam masala
For the tikka shashlik: 
1 onion
1 green pepper
1 red pepper

Method

  • Line a sieve with muslin over a bowl
  • Heat the milk over a medium heat
  • When the milk is almost boiling, lower the heat and add the lemon juice
  • Stir with a wood spoon until the milk curdles and separates
  • Turn the heat off and pour the mixture through the muslin
  • Allow to drain, then pull the muslin and squeeze all the liquid out
  • Ti the muslin and place something heavy on top over a siever
  • Let it drain for an hour and you’ll have paneer
  • Mix together all your marinade ingredients
  • Chop the peppers and onions into chunks
  • Cut the cheese into cubes and add the marinade and vegetables
  • Leave the paneer to marinade for at least 2 hours
  • Using toothpicks, layer the paneer cubes and vegetable chunks
  • Grill in the oven on high heat for 7 minutes
  • Sprinkle fresh coriander and enjoy
